Designation of Origin of Guijuelo was established in 1984 (it is the oldest in the sector) and since its inception has been the pursuit of quality as taught. It is the only PDO in which, besides visiting in the pasture to certify enough acorn, a subsequent analytical, which determines the amount of acorns eaten by each animal.

The value of being the only DO supra-regional industry, allows us to always have the best examples of Iberian pork in Andalusia, Extremadura and Salamanca, and choose the best power to receive the advantages of the widest possible range of pastures. This ensures a diet based on acorns, optimal for each animal, regardless of the weather, and so disconnecting the variability of each area from the quality of a specific year.

Guijuelo is more than 1,000 meters above sea level in a privileged enclave climate. Due to the dry cold weather, the number of days that hams and shoulders remain under the sea salt are lower, since it is not necessary to have fresh meat staying more than a few days in salt to also have the defense that gives the characteristic cold. As a result, you will enjoy a milder flavor and texture than in other denominations of origin and areas which are further south and warmer.

Each piece is marked and sealed by the Designation of Origin of Guijuelo, and therefore must bear the seal and the numbered band.
